Marinated Sardines |
Ovo je recept moje svekrve, koji je toliko jednostavan ( a tako dooobro ispadne)
da ga želim podijeliti sa vama :)
This is my mothe-in-law's receipe, so simple (but the outcome is so goood),
I wish to share it with you :)
Prvo, potrebne su srdele.
Najbolje su one ljetne srdele, kad su znatno veće,
ali mi ovu marinadu radimo kroz cijelu godinu, kad god ih možemo nabaviti.
First, you will need some fresh sardines.
In our region, it is common knowledge that the most delicious sardines
are the ones cought in summer-time,
but we make this marinade all year around, whenever we can find them on market.
Srdele se trebaju obrisati kuhinjskim ubrusom,
očistiti od glave i iznutrica.

Srdele se posole.
Na 1 kg srdela stavi se 1,5 žlica (od juhe) soli.
Očišćene srdele se zaliju pravom kvasinom.
Ako je kvasina prekisela, pomiješa se sa malo vode.
You should season the sardines with salt.
On 1 kg of sardines, use 1,5 table spoons of salt.
Cleaned sardines are poured with vinegar (made of wine).
If vinegar is too sour, pour a little of water in.
Ostavi se da se mariniraju u kvasini 1 sat.
Sardines are left to marinate for an hour.
Uzmite jednu teču (posudu, lonac) u kojoj ćete kuhati marinadu.
Srdele se u teču slažu trbuhom dolje, tako da je jedna okrenuta lijevo, druga desno (rep-glava-rep-glava).

Osim što je kod marinade vrlo važno dosta gusto posložiti srdele,
važno je i kako se redovi slažu.
Ako je prvi red slagan, npr. istok-zapad,
onda se drugi slaže sjever-jug,
dakle okomito jedan na drugi.
It is very important that you place sardines very tight,
but it is important how to arrange the rows, also.

Između svakog reda poslažite par listova lovora, nekoliko češnjaka,

Sad se u posudu ulije običnog, bijelog ulja, tek toliko da sve prekrije, ne više.

Kuhati na laganoj vatri 1,5 sat.

Kad se dobro ohladi, može se probati :)
Ovakva marinada se u hladnjaku može držati (u istoj teči) i do mjesec dana,
ali kod nas nikad nije toliko dočekala ;))
Odličan obrok za marende,
ili čak za laganu večeru.
Uz srdele jako dobro paše i malo kapule (crvenog luka), fetu kruva,
može se malo prekapati i maslinovim uljem, čak i limunom.
When it is cooled enough, you can try it :)
This marinade can be stored in a fridge (in a same pot) for a month,
but it never lasted that long in our house ;))
It is very nice meal in case you got surprise guests,
or for a light dinner.
You can serve marinated sardines with onions, a piece of bread,
sprinkled with olive oil, or even lemon juice, if you like.
